If you’re looking for a quick and easy recipe that you can prepare in your air fryer, then this sponge cake recipe is perfect for you. It’s easy to make, and it tastes great!

Ingredients

  • 3.7 oz Butter

  • 0.55 cups Caster Sugar

  • 2 Eggs

  • 1 tablespoon Milk 

  • ¼ teaspoon Vanilla extract

  • 0.84 cups Self-raising flour OR

  • If using all-purpose flour, add a teaspoon of baking powder

  • ¼ teaspoon Baking powder

Directions

  • Using a weighing scale, perfectly measure out the ingredients.
  • Lightly grease the cake mould with butter and line with parchment paper. Set aside.
  • Preheat at a temperature of 150C.
  • Add butter and sugar In the mixing bowl, mix with the electric mixer till it’s light and fluffy.
  • Add in the eggs and milk then mix with the electric hand mixer.
  • Add the flour and baking powder and mix till smooth and creamy ribbon texture.
  • Pour the cake batter into the cake mould.
  • Put the cake mould in the preheated air fryer and bake at a temperature of 150C / 302F for 30 minutes.
  • Insert a skewer in the middle of cake and if it comes out clean, the cake is done. 
  • Bring it out of the air fryer.
  • If the skewer is wet, bake for 2-3 minutes and again test with skewer.
  • Demould the cake on a cooling rack and leave it to completely cool.
  • Cut and serve or decorate with buttercream icing or chocolate frosting or as you may wish.

Notes

  • Butter and eggs should come at room temperature before using in recipe.
  • Cream the butter and sugar slowly till it’s pale in colour and fluffy.
  • Preheat the air fryer as directed for even baking of the cake.
  • Bake at a proper temperature so the cake cooks evenly and comes out fluffy and soft.
  • At higher temperature makes the outside of the cake brown too quickly. 
  • Air fryer baking and cooking time vary with each brand so you might need to adjust the time.
  • Don’t overfill the cake pan as the cake rises the batter will over flow the mould.
  • Fill the cake batter till half of the mould.
  • Let the cake completely cool before (if) adding frosting.
